    can I freeze cake?

    Just make lots of carrot cake and was hoping it might keep in the freezer in lunch box size portions.

    Dont even defrost them just put them frozen into the lunchboxes.... defrosted by lunchtime.

    post me a slice....see if its up to my standard

    Mark had cake at work once, which his colleagues wife had made once. She'd run out of carrots so used something like corgette or brocolli...wasn't a success

    Ugh, sounds disgusting. I have a mountain of carrots I need to process from the veggie plot. Soup will be next I think.

    When I make carrot cake it doesn't last long enough to even think about freezing it...it's gone in less than 24 hours (mainly by DH)

    However, should the day ever come where I do get a chance to freeze it, is the icing ok to freeze too? The icing in my recipe is made up of mascarpone, butter, icing sugar & vanilla essence.
