If I buy a bunch of basil or coriander and use half, could I freeze the other half - if I only want to add it to a dish, rather than use as garnish
Presumably it would be less than pretty to look at but would it still be okay to cook with?
Yep - freeze in water
I freeze it all the time, without water... The leaves due discolour but if you are only interested in the taste rather than the garnish - freeze away!

You can plant coriander out in the garden once the frosts are finished but it will shoot away and flower and the leaves are not so good then - but it is very good for beneficial insects. And I think you can then save the seed, I can't remember if I have done that succesfully or not. The plants in the pot are usually a lot of very young seedlings all crammed together so they won't cope with being picked repeatedly. When you plant them out you can split them up so they have more room to grow.
Parsley does very well chopped up and then loose frozen in a bag. I have done this before when the glut is on! Supermarket parsley planted out does quite well because it is hardier than coriander and not so inclined to bolt - there is some out the front which has started throwing up plenty of usable leaves from a plant I put out last year (and the frosts were so severe the bay tree is quite possibly dead)
